I never thought I’d describe wheat as dramatic, but this variety completely changed my mind. Growing up to 4 feet tall, it’s absolutely stunning when planted en masse—it’s hard to look away from the mesmerizing contrast of its grayish-blue husks and long black awns. I found myself admiring it daily, especially as it swayed gracefully in the breeze.

Named after the city of Utrecht in the Netherlands, it has a rustic charm that makes it perfect for bouquets, adding texture and elegance. While it is edible, threshing can be a bit tricky, so I mainly grow it for its beauty. This variety has become a favorite of mine, redefining what wheat can offer in the garden.
