Summer Savory (Satureja hortensis) is a little woody herb with an upright stature and great flavor. Reminiscent of thyme in its appearance, it’s an under-utilized herb in American kitchens. Its excellent piney flavor will enhance a roasted chicken, pot of beans, and many other hearty dishes. It is a key component of the popular Herbs de Provence spice mix. This variety is the annual type of savory which is often regarded as having a superior flavor compared to its perennial counterpart.
