Ailsa Craig onions have been one of our most beloved crops for years. This sweet onion, similar to Walla Walla, is notable not only for its mild, delectable flavor but also for its surprisingly good storage capacity under the right conditions. We first started growing them in the late 90’s and our farmers market customers loved them (they can get huge!). Introduced in 1887 and originating from Scotland, we’ve been working to refine this strain and keep it looking great for generations to come! Much thanks to the late breeder John Navazio for walking our onion fields with us and teaching us crop improvement techniques!
