Eat your greens year-round! Baby bok choi is such a treat in spring and at its best when barely sautéed. Homegrown winter spinach is the sweetest surprise if you have never had it and kale is one of my favorite vegetables, as it can be thrown into so many dishes. Endive and escarole are quickly gaining popularity in the US among foodies and chefs with Portland, Oregon now holding an annual festival to celebrate them. Greens are delicious and nutritional powerhouse, so eat your greens!
