Baby Bok Choi

This Bok Choi (also known as Pac Choi) is a smaller version of the classic and is quick-growing, approachable, and undeniably cute. Best direct-seeded, this vegetable thrives with minimal care (unless you have flea beetles, in which case it benefits from row covers to protect it). Best for fall or early spring as hot weather induces bolting. It’s quick-cooking in the kitchen - delicious lightly stir-fried with fresh ginger and soy sauce, chopped raw for salads, or simply dropped into miso soup for a quick and satisfying meal.
