Amaranth has been a garden staple for years, beloved for its rich colors and mighty stature. This highly uniform variety produces a large central head with numerous side shoots, all on long, sturdy stems. Opopeo adds a large punch of magenta color while providing texture and drama in late summer/fall bouquets. It has a striking presence in the back of a garden border and pairs beautifully with heat-loving, late-season plants like Rudbeckia and Zinnia. Commonly used in dry flower arrangements. Additionally, it’s used as a natural dye, yielding shades of burgundy to soft pink. As the flower heads go to seed, it becomes a good food source for birds.
Native to Opopeo, Mexico, its leaves and seeds are edible and considered a nutritional powerhouse. This classic variety has had a place on our farm for at least a decade. Easy to germinate and easy to grow.
